No, really. This is fantastic, easy, and not your mama's boring old meat 'n potatoes recipe. I bought the two-pack of beef chuck roasts at Costco. Not sure it would come out as tender and delicious with a leaner roast.
Beef Chuck Roast, about 3 lbs.
1 can ginger ale
1.5 cups ketchup
fresh ground black pepper
1 T. ground cumin
1 red bell pepper, cut into large pieces
Place roast in a slow-cooker. Cut in half if it's too big to fit in one piece.
Pour ginger ale and ketchup over meat.
Sprinkle with cumin and black pepper.
Cook on HIGH for one hour.
Add red pepper chunks into the liquids.
Cook on LOW for 6 hours.
You can serve this over pasta, potatoes, or rice. To keep it low-carb, I made mashed cauliflower instead.
